Christmas Dinner Ideas

Christmas Sweet Potato Casserole

  • 3 cups of cooked mashed sweet potatoes
  • 2 eggs
  • 1 cup of sugar
  • 1/2 cup of milk
  • 1/2 teaspoon of salt
  • 1 stick of butter, softened
  • 1 teaspoon of vanilla extract
  • 1 cup of light packed brown sugar
  • 1/2 cup of flour
  • 1 cup of finely chopped pecans

In one bowl, mix sweet potatoes, eggs, sugar, milk, salt; add 1/2 stick butter and vanilla.
In another bowl add brown sugar, flour, nuts, and 1/2 stick butter. Add 1/2 nut and flour  mixture in potato mixture. Save 1/2 nut and flour mixture for topping. Place in baking  dish and add topping. Bake 350 degrees for 1/2 hour.

Turkey Buffet Casserole

  • 4 oz. of medium white noodles, (about 2 cups)
  • 1 pkg. of frozen broccoli spears
  • 2 tablespoons of butter or margarine
  • 2 tablespoons of flour
  • 1 teaspoon of salt
  • 1/4 teaspoon of prepared mustard
  • 1/4 teaspoon of pepper
  • 2 cups of milk
  • 1 cup of grated American cheese
  • 2 cups of cut up cooked turkey
  • 1/3 cup of slivered toasted almonds

Preheat oven to 350 degrees. In separate sauce pans cook noodles and broccoli as labels  direct just until tender.
In saucepan over low heat, melt butter; stir in flour, salt, mustard, pepper and milk. Cook, stirring constantly until thickened.

Remove from heat, stir in  cheese until melted.
Drain noodles and broccoli. Dice broccoli stems; leave flowerettes whole.
Arrange noodles, broccoli stems, turkey in shallow casserole or 8 inch square  baking dish; pour cheese sauce over all. Arrange broccoli flowerettes on top, pressing them lightly into sauce; sprinkle with almonds.

Bake uncovered 15 minutes or until bubbling hot. Makes 4 to 6 servings.

Rice Ham Casserole

  • 1 box of Uncle Ben’s wild rice mix
  • 1 (10 oz.) box of chopped broccoli, cooked and drained
  • 1 cup of chopped ham
  • 1 cup of sharp Cheddar cheese, cubed
  • 1 can of mushrooms, drained
  • 1 can of cream of celery soup
  • 1 cup of mayonnaise
  • 2 teaspoons of prepared mustard

Cook rice according to directions.
Place rice on bottom of 9 x 13 pan.
Layer on top; broccoli, cheese, ham and mushrooms.
Combine remaining ingredients and put on top.
Sprinkle with Parmesan cheese and bake at 350 degrees for 45 minutes. Serves 4 or 6.

All Time Favourite Christmas Cookies

Christmas cookies recipes for your enjoyment


Christmas Ginger Cookies

  • 6 cups of flour
  • 1 tablespoon of baking soda
  • 1 tablespoon of ginger
  • 1 teaspoon of cloves
  • 1 teaspoon of cinnamon
  • 1 teaspoon of nutmeg
  • 1/2 teaspoon of salt
  • 1 cup of Crisco shortening
  • 1 cup of molasses
  • 1 cup of packed brown sugar
  • 1/2 cup of water
  • 1 large egg
  • 1 teaspoon of vanilla

Mix flour, soda, spices and salt. Beat shortening, molasses, sugar, water, egg and vanilla until well blended. Gradually beat in flour mixture. Will be soft. Divide into fourths. Pat each 1/4 into 1″ thick round.

Wrap in plastic and refrigerate at least 3 hours or up to 1 week. Roll on lightly floured surface to 1/8″ thick, cut with gingerbread men cutters and bake at 350 degrees for 10-12 minutes. Cool slightly on cookie sheet, then transfer to wire racks to cool completely.


Peanut Butter Bars

  • 1/2 cup of butter or margarine
  • 1/2 cup of firmly packed brown sugar
  • 1/2 cup of sugar
  • 1 large egg
  • 1 teaspoon of vanilla
  • 1/3 cup of crunchy style peanut butter
  • 1 cup of unbleached flour; sifted
  • 1/2 teaspoon of Baking Soda
  • 1/4 teaspoon of salt
  • 1 cup of quick cooking oats
  • 1 cup of semi-sweet chocolate chips

Cream the butter, brown sugar, and sugar in a mixing bowl until light and fluffy, using an electric mixer at medium speed.  Beat in the egg and vanilla.  Blend in the peanut butter.  Sift the flour, baking soda and salt together.  Stir the dry ingredients into the creamed mixture, blending well.  Stir in the oats.

Spread the mixture in a greased 13 X 9 X 2-inch baking pan.  Sprinkle with the chocolate chips.

Bake in a 350 degree F. oven for 25 minutes or until done.  Cool in the pan on a rack. While still warm drizzle with the vanilla glaze.  When cooled, cut into 48 (2 X 1 1/2-inch) bars.

For The Vanilla Glaze:

  • 1/4 cup of confectioners’ sugar
  • 1/4 cup of peanut butter
  • 2 tablespoons of butter or margarine
  • 1/4 cup of hot milk
  • 1/2 teaspoon of vanilla

Combine all of the ingredients in a bowl and beat, with an electric mixer set to high speed, until smooth.


Shortbread cookie recipe

Fruited Shortbread Cookies

  • 2 1/2 cups of flour
  • 1 teaspoons of cream of tartar
  • 1 1/2 cups of confectioner’s sugar
  • 1  – 9 oz box mincemeat
  • 1 teaspoon of vanilla
  • 1 teaspoon of baking soda
  • 1 cup of utter, softened
  • 1 egg

Preheat oven to 375F.   Combine flour, soda, and cream of tartar.  In a large bowl, beat butter and sugar until fluffy. Add egg.  Stir in vanilla and crumbled mincemeat. Add dry ingredients.

Mix well, batter will be stiff. 5. Roll into 1 1/4″ balls. Place on ungreased cookie sheet, flatten slightly..

Bake 10-12 minutes or until lightly

For Example a quick an easy Easter Biscuit Recipe

BUNNY BISCUITS

Ingredients

  • 4 oz (100g) butter
  • 6oz (150g) plain flour
  • 2oz (50g) light muscovado sugar
  • half a tsp. (2.5ml) ground cinnamon
  • Grated rind of one lemon
  • The yolk of one large egg
  • 2-3 tbsp. Water currants and marshmallows to decorate

Method

  1. Preheat oven to 350F, Gas mark 4, 180C
  2. cut the butter into small cubes and mix with the flour in a mixing bowl until like fine breadcrumbs
  3. Stir in the muscovado sugar, ground cinnamon and the grated lemon rind
  4. Stir in the egg yolk and enough water to mix into a soft dough
  5. Knead dough on a floured surface until smooth then roll out a quarter inch (0.5cm) thick
  6. Cut out biscuits with a rabbit cutter or make a template and cut out biscuits with a knife
  7. Place on un-greased baking sheets and bake for 10-15 minutes until a pale golden colour
  8. Transfer to a wire rack to cool completely
  9. Decorate with currants for eyes and marshmallows for tails, fixing them with a little decorating icing

Easter crafts for kids

Giant Easter Eggs

Ingredients

  • Balloon
  • Crochet Thread
  • Watered Down Glue
  • Large Paintbrushes

Method

Blow up the balloon and tie a 2 foot piece of thread to the bottom. Using a large paint brush, cover the entire balloon with the watered down glue (work quickly so the glue doesn’t have a chance to dry).

Wrap crochet thread around the balloon in one direction, leaving small gaps
about 1/2 inch wide so the balloon isn’t completely covered.

Apply another light layer of glue on top of the thread and wrap with another layer of crochet thread in another direction.
Repeat until the balloon is covered with thread.

Hang the balloon from the bottom thread to dry for about 24 hours.
When fully dry, pop the balloon and gently pull it out of the thread.
